I have several

blog posts in process but I cannot get blogger to upload pics. So I'm not being a slacker blogger on purpose! Spicy

My HotShot and Daddy wanted to have a flamin' hot cheeto puff eating contest. Jack had to have his regular cheeto puffs, too. The one rule, if you took a drink of water you were disqualified. I thought for sure one of them would give up before the bag was empty but no.... 1 entire bag gone and they wanted more!

Menu 3/11/12

My menu this week is short. It's spring break so the kids will be home. We are allowing for 3 meals to be eaten out since I'm sure we will be out and about having some fun. But the 4 meals planned are.....

Meal1- Chicken Tortilla Soup by Ree Drummond with avacados, cheese, sour cream, and salsa toppings

Meal2 - Chicken Piccata by Giada (food network) w/ side salad and roasted broccoli.

Meal3 - Meatballs (cooked in grape jelly & chili sauce) with mac-n-cheese and carrots.

Meal4 - Leftovers/ clean out the fridge

If we add any fantastic meals or eat anywhere cool, I'll blog about :) Happy Spring Break!

Spring Is In the Air

I am loving this weather... this is the kind of weather I could live with year round. BUT, I am a fan of 4 distinct seasons also. Especially when having a good winter cuts down on the crazy amount of bugs. I am still holding out for a couple of good freezes.

Spring IS my favorite season. The temperatures are perfect. It's breezy. There are more chances of rain. Trees budding, flowers growing... life is new and fresh. AND... the kids get a week long break from school! Yay! We always try to do a mini vacation during spring break (like Sea World). This time we are thinking of heading up to Robbers Cave State Park in OK for a couple nights to semi-rough it.... you know, in a cabin. There are suppose to be lots of really good hiking trails here and some caves. We could all use some good outdoor time enjoying God's awesome creation!

Menu 3/4/12

Sunday - Didn't get planned! Oops!
Monday - Loaded baked potatoes (sour cream, butter, green onions, cheese, and instead of bacon... diced smoked sausage. We love the brookshire's brand!) with side salads. Making a fresh batch of ranch dressing using Ree Drummond's recipe. It is delish!
Tuesday - Soupy Chalupa's - fried flour tortilla topped with a ground beef mix (tomato sauce, ranch style beans and taco seasoning, and ground beef) , lettuce, tomato, and cheese.
Wednesday - Hawaiian Chicken breast strips, mac n cheese, and a side salad.
Thursday - Smoked Pork Loin using the sauce from this pork recipe, Broccoli Cheese & Cracker Casserole (also from Ree - click here)
Friday - Beef Tacos
Saturday - Help Yourself aka Clean out the Fridge

It's pizza! No, it's monkey bread! No! It's muffins!

We like pizza... or rather pizza toppings... in many forms! We like pizza. We like calzones. We like pepperoni rolls. We like pizza bread... Get my drift? We have been making our own pizza crust lately using a focaccia bread recipe of a friend (SUPER EASY). A while back we made a savory monkey bread using garlic butter instead of cinnamon and sugar and stuffed each piece of dough with a cube of mozzarella and a slice of pepperoni. The boys were requesting this again but I decided to combine the too.. I used the focaccia bread recipe for the dough. Another change I made is instead of one big loaf of bread, I used a muffin tin and put 3 dough balls in each muffin cup like you would do for cloverleaf muffins. Bake at 475 for about 15 minutes, brush with butter, sprinkle with grated parmesan and serve with tomato sauce. Henry added more sauce on top of his. Nelson loved the stringy cheese! Jack tore in to his pretty quick! Here, have a taste... you know you want one! I mean just look... yummy gooey cheese, pepperoni, soft herbed focaccia bread... These went fast. I'll have to double up on the recipe next time. Enjoy!
